Healthy Rice Pudding

I have a love/hate relationship with Sundays. Generally I try to get my work done on Saturday so I can enjoy the day, but I always wake up on Sunday feeling like it's time to get back to my weekly routine. As much as I love indulgent weekend breakfasts, I try to make something a little more wholesome on Sunday so I feel great starting the week.

That being said, I don't see any reason why a wholesome breakfast shouldn't also feel like a delicious, indulgent breakfast. After much experimenting, I've perfected this healthy brown rice pudding. It's vegan, it's gluten free, and it's packed with nutritious ingredients.

I whipped up a batch last night and am enjoying mine with some maple almond butter, homemade raspberry compote, cacao nibs, and pistachios, but you can top it with whatever you want. Whip up a batch on Saturday night and you'll have breakfast until mid-week, making this the perfect Sunday breakfast.

Brown Rice Pudding

prep time: 15 min total time: 2 hours serves: 4


2 c almond milk or coconut milk
2 c cooked brown rice
2 medjool dates, pitted
2 T chia seeds
1 t ground cinnamon
½ t cardamom
½ t vanilla extract


Combine milk of choice, dates, vanilla, cardamom and cinnamon in a blender and pulse until completely smooth. Pour mixture into a bowl and whisk in chia seeds. Stir in brown rice, cover, and refrigerate until chia seeds have puffed up and mixture has set to the consistency of a pudding.

Top with your choice of ingredients and serve. Leftovers can be kept in refrigerator for 2-3 days.

chocolate almond base + cacao nibs + hazelnuts + strawberries
unsweetened vanilla almond base + blackberries + macadamia nuts + ricotta + meyer lemon juice
chocolate almond base + peanut butter + peanuts + cacao nibs + bananas
coconut milk base + macadamia nuts + shredded coconut + papaya
